Pastel de Tres Leches (Three Milk Cake)
Make 6–8 servings
Ingredients
Bizcochuelo
- 1 teaspoon lemon peel
- 4 egg whites
- 4 egg yolks
- ½ cup sugar
- 4 tablespoons of corn starch
- 3 tablespoons corn flour
Tres Leche Mix
Directions
Bizcochuelo
- For convenience, buy pre-baked bizcochuelo. Otherwise, beat egg whites until soft peaks form.
- Add yolks one by one while gradually adding sugar. Reduce mixer speed and add remaining ingredients one spoon at a time.
- Preheat oven to 350 °F.
- Pour mixture in a rectangular baking pan
- Bake for about 20 minutes or until it turns golden brown. Remove from oven and let cool.
Tres Leche Mix
- Bath the bizcochuelo with mixture of tres leches completely covering until it absorbs into the dough.
- Decorate with meringue, strawberries, or whipped cream and refrigerate until ready to serve.
