Hainan Chicken

Make 4 servings

Ingredients

Chicken

Ginger Sauce

  • 1 tablespoon minced ginger
  • ½ teaspoon salt
  • 5 teaspoons vegetable oil
  • ½ teaspoon chopped green onion

Chicken Soup

Chicken-flavored Steamed Rice

  • 4 cups rice
  • 3½ cups of broth mixture from cooking chicken
  • 2 tablespoons minced garlic
  • 5 teaspoons vegetable oil

Directions

Chicken

  1. Rub outside and cavity of chicken with salt, then rinse.
  2. Put chicken into pot.
  3. Add 2 cans of broth into pot.
  4. Add water into pot to cover chicken.
  5. Remove chicken.
  6. Cover pot and use medium heat.
  7. Stuff 2 ginger slices into chicken.
  8. Bring to boil and put in chicken with breast facing down.
  9. Keep lid closed and wait for pot to boil again.
  10. When pot boils again, turn off the heat but do not remove lid.
  11. Wait until chicken is cooked. 3 pound chicken takes about 30 minutes to cook.
  12. Remove lid and cool chicken at room temperature for 1 hour.
  13. Save broth mixture for cooking rice.
  14. Chop chicken into bite-size pieces and serve.

Ginger Sauce

  1. Combine ingredients and serve.

Chicken Soup

  1. Strain 3½ cans of broth into 4 serving bowls.
  2. Sprinkle green onion and serve.

Chicken-flavored Steamed Rice

  1. Wash rice and drain.
  2. Coat vegetable oil in a pan over low heat.
  3. Add minced garlic to pan and stir-fry until fragrant.
  4. Add uncooked rice to pan and stir-fry until rice is glossy and fragrant (3–4 minutes).
  5. Turn off pan and move contents into rice cooker.
  6. Strain broth mixture into rice cooker.
  7. Start rice cooker and serve when finished.
