Hainan Chicken
Make 4 servings
Ingredients
Chicken
Ginger Sauce
- 1 tablespoon minced ginger
- ½ teaspoon salt
- 5 teaspoons vegetable oil
- ½ teaspoon chopped green onion
Chicken Soup
Chicken-flavored Steamed Rice
- 4 cups rice
- 3½ cups of broth mixture from cooking chicken
- 2 tablespoons minced garlic
- 5 teaspoons vegetable oil
Directions
Chicken
- Rub outside and cavity of chicken with salt, then rinse.
- Put chicken into pot.
- Add 2 cans of broth into pot.
- Add water into pot to cover chicken.
- Remove chicken.
- Cover pot and use medium heat.
- Stuff 2 ginger slices into chicken.
- Bring to boil and put in chicken with breast facing down.
- Keep lid closed and wait for pot to boil again.
- When pot boils again, turn off the heat but do not remove lid.
- Wait until chicken is cooked. 3 pound chicken takes about 30 minutes to cook.
- Remove lid and cool chicken at room temperature for 1 hour.
- Save broth mixture for cooking rice.
- Chop chicken into bite-size pieces and serve.
Ginger Sauce
- Combine ingredients and serve.
Chicken Soup
- Strain 3½ cans of broth into 4 serving bowls.
- Sprinkle green onion and serve.
Chicken-flavored Steamed Rice
- Wash rice and drain.
- Coat vegetable oil in a pan over low heat.
- Add minced garlic to pan and stir-fry until fragrant.
- Add uncooked rice to pan and stir-fry until rice is glossy and fragrant (3–4 minutes).
- Turn off pan and move contents into rice cooker.
- Strain broth mixture into rice cooker.
- Start rice cooker and serve when finished.
